Easy vegan meals

I’m sure you’ve realized that vegans are everywhere and are speaking up for the animals and the environment. It has been a year now since becoming vegan and I want to share my experience so far. I’ll admit that in the beginning it was not easy. I struggled a lot in figuring out how I can make this big lifestyle change work for me. After doing my research and watching a lot of vegan YouTubers, food documentaries, and readings on my own terms, everything about what I was doing all made sense.

When starting out on this new change there can be a bit of confusion on the diet, but with so many vegan options out there now in both grocery stores and restaurants it’s impossible to ever feel like going vegan is not at all convenient for you. Going vegan has actually awakened my love for cooking and finding new ways to make my dishes more interesting – not to mention cooking at home has been saving a lot of money as well! I’m here to show you just a few of my favourite meals that are simple and easy to prepare throughout the week.

My version of a potato salad.
Baked potatoes seasoned with paprika, garlic, ground basil, and salt – with spinach, tomatoes, pepper – and drizzled with sweet chili sauce, Sriracha, and a side of hummus.

Not so junkie after all fries and salad.
Mixed gold potatoes and sweet potatoes baked lightly in oil, ground basil and salt with a side of Vegenaise – served with a salad of mixed greens, grape tomatoes, beets, avocado, a dash of apple cider vinegar, and topped with chia seeds.

La(zy) pasta.
Quinoa macaroni with tomato sauce, beefless ground beef, spinach – finished with vegan parmesan cheese (nutritional yeast is another great option!).

Simple and filling maki rolls.
Prepared Japanese sushi rice seasoned with Mizkan sushi vinegar – filled with fresh cucumber (if you want to bump up the game add avocado or asparagus) all wrapped in nori and lightly topped with roasted sesame seeds – with side of organic soy sauce and wasabi.

    I’ve been trying to go vegetarian before going full vegan. You know, doing it slowly but surely. Unfortunately, I couldn’t do it because of financial matters and sometimes, veggies and fruits here in our place are a lil bit pricey compared to meat. 🙁 Although I’m still dreaming of becoming one for the sake of my body and the benefit of being vegan even though it would take a lot of sacrificing but I know in the end, it will all be worth it. Maybe when I already have a job, I’ll be one. Who knows, right? 🙂

      Getting on a vegan diet isn’t as expensive as people make it to be. As you can see I eat a lot of rice and potatoes which is very affordable. I started off as a vegetarian as well for 2 years before becoming vegan a few years later. But you’re right, you need to be ready for the change 🙂

    I definitely think the initial change would be the hardest part, but these options look delicious. Especially the pasta!!! Hope it’s getting easier for you now x

    Yummmm! Qué buena pinta tiene todo, me encantaría probar todas esas recetas y prometo que lo haré muy pronto, la lazy pasta se ve genial, creo que será mi opción preferida.

    Yo no soy vegano, pero si suelo buscar este tipo de opciones bastante porque he de admitir que me gusta mucho la comida sana 😉 y creo que es bastante importante añadir este tipo de alimentos más a menudo en nuestras dietas. Supongo que al principio fue fácil pero ahora hay más opciones ahí afuera y es un poquito más sencillo!

    All of these meals look amazing, I will definitely try the lazy pasta! I’m currently going more and more plant based too (I’ve been vegetarian for years) and even though I find it easy to stick to a plant bases diet at home it can be tough when going to a restaurant. xx

      I sometimes still struggle a bit but I’ve found that just asking the restaurant if they can substitute this for that they are more than willing to accommodate to you 🙂
